It's the weekend already? Yes!
Well do I have a treat for you to try out on a hot date with your hunny this weekend.
This is a healthy AND tasty recipe that I stole from the Weight Watchers website (say that three times fast).
And when I say stole, I mean they have them on there for me to use, and that is what I did!
So here are the deets. Enjoy! And be sure to let me know how it goes over in your household because Burley LOVED this meal, and Macey LOVED licking the plates :)

Ingredients:
1lb uncooked pink salmon fillets, skinless!
(This is important. You will make quite a mess of yourself if you purchase salmon with the skin on and then try to fillet it yourself with a dull knife. I don't know this for a fact but I'm sure it has happened to someone at some point....)
2 medium uncooked scallions, minced.
3 Tbsp fat-free egg substitute
2 Tbsp ginger root, fresh, peeled, minced.
1 Tbsp low-sodium soy sauce
1 Tbsp rice vinegar
1 tsp toasted sesame oil
1 spray cooking spray (or olive oil)
Directions:
Cut the fillet into four pieces, then place it into a food processor.
Pulse a few times, until the salmon is finely ground but not mushy (take it slow, no one likes mushy salmon burgers).
Scrape the salmon into a large bowl.
Mix in scallions, egg substitute, ginger, soy sauce, rice vinegar, and sesame oil.
Spray your grill or grill pan down. These burgers are delicate :)
Separate your salmon mixture into 4 burger patties.
Over medium hate, cook the salmon patties until lightly browned and firm (turning once, this takes about 8 minutes).
You now have four gorgeous salmon burgers!!!
I made mine on a bed of spinach salad, that I topped with my own version of an asian vinaigrette (2 parts EVOO, 1 part toasted sesame oil, 1 part lemon juice, garlic/salt/pepper to taste).
On the side, I sauteed some broccoli (EVOO, salt, pepper, broccoli, garlic if you like) which is always a hit, in my belly.
I also made a scallion/lemon aioli for the burger, which is just an egg yolks, about a tsp of scallion and lemon juice, salt, pepper, and process it with some EVOO until it is a mayo like consistency).
My mouth is now watering and I want to go back in time and eat it again.
Maybe I'll scrounge up some salmon for tonight...
